What is the monochrome cooking?
It correspond to make a meal just with one color, some say that it is near to the Art. If you convey some friends to the dinner, make a monochrome meal! You can choose whatever color you want, but some are really hard to compose =). I propose you few colors and few ideas for a meal but let your imagination run.
Pink:
For the aperitif, you can make some mashmallows-bacon brochettes.
For 6 persons, you'll need:
18 pink mashmallows
18 thinly slices of bacon
18 skewer
Cut with a pair of scissors a slice of bacon to make it have the lenght of the mashmallow. Then surround each mashmallows with a strip of bacon. Stick a skewer into each mashmallows. Around 5 cm above a flame, warm the mashmallows surrouned by the bacon, without stopping turning the skewer during 15 seconds. Eat them before they're cold.
Then, you can follow with a salmon-vodka.
You'll need, for 8 persons :
1 kg of fresh salmon, in 2 loins of same size and same weight
3 bunch of aneth
13 cl of vodka
60 g of sugar
6 g of ground pepper
25 g of marin salt
Wash quickly the salmon under cold water, then bench the fishbones. Wash the aneth and remove the biggest stalk, then cut them briefly with a pair of scissors in a bol. Add in it the vodka, the sugar, the pepper and the salt. On a cling film in the bottom of a dish. Put in it the first loin skin side on the cling film. Spread the aneth stuffing on the flesh, then recover it with the second loin. Wrap the salmon up with the cling film, so the fish is right tight. Put it in the fridge for 48 hours, turning it in the dish every 6 hours. Before the meal, cut the two salmon together in thin slices. Position it in a plate and enjoy it with a pink rice.
Blue-Purple
For a starter you can eat red cabbage, cut in thin slices; or you can also eat beetroots with a vinegar sauce.
Rabbit with violet’s mustard and herbal.
For 6 persons, preparation: 15 min, roasting: 1 hour.
You’ll need:
1 rabbit cut in pieces
4 shallots
15 cl of white wine
30 cl of chicken broth
1 bunch of parsley
1 bunch of chervil
1 bunch of tarragon
2 big spoon of violet’s mustard
4 big spoon of oil
salt, pepper
Wash, dry, pluck and grind grossly whole the herbs.
Peel and grind the shallots.
Warm the oil in a big pot. Add the pieces of rabbit and colour them on each sides, then take them off the pot. Add the shallots in and brown it 3 min while mixing.
Put back the rabbit, add the salt and pepper then the white wine and make it boil. Turn down the fire, wet with the broth, add whole the herbs. Cover and bake it for an hour. In the late baking, take a sample of the broth with a ladle and pour it down a bowl. Add the mustard and mix it well. Pour it down back into the pot and pursue the roasting ofr a few minutes.
Put the rabbit in a dish, pour down the roasting sauce on it, serve it instantly with a violet Siam rice.
To end your dinner, you can eat a blueberry pie.
Yellow
For the meal, it’s easy: a curry chicken.
For 4 persons, preparation 15 min, roasting 35 min
You’ll need
1 onion
450 g de of white of chicken
1/2 teaspoon of curry powder.
40 cl of coco milk
1 apple
salt, pepper
Peel and slice thinly the onion, make it melt slowly with a bit of oil at low fire. Add the meat cut in cubes. When it is well browned, add salt and pepper and the curry. Pour down the coco milk and let it roast 5 min. Add the pieces of apple and roast it again 5 min. Serve it with pasta or yellow rice.
For the dessert, you can make whatever cakes, you just have to add yellow colouring.
